100% Whole Wheat Sourdough Animal Crackers

Ingredients
  

  • 1 stick butter 1/2 cup
  • 50 g brown sugar
  • 50 g honey
  • 100 g sourdough discard
  • 300 g whole wheat flour freshly ground is best
  • 1/2 tsp baking soda
  • 65 g milk 1/4 cup

Instructions
 

  • Begin by melting the butter on the stove or in the microwave. Add the sugar, honey, and milk. Mix until dissolved.
  • Whisk together the flour and baking soda and add it and the sour dough starter to the butter mixture.
  • Begin mixing with a spoon, then when the dough gets too thick switch to kneading with your hands.
  • Once the dough is fully mixed, shape it into a ball and cover it to let the dough rest.
  • Let the dough sit covered on the counter for at least 2 hours but up to 8. Then let it chill in the refrigerator for an additional 2 hours or up to 3 days.
  • When you are ready to cut the dough, split the ball in 2 and roll out half at a time into a 1/8 in. thin square.
  • Use a pizza or cracker cutter to cut the dough in your desired shapes.
  • Use a spatula to scoop and move the crackers to a baking sheet lined with parchment paper or a silicone baking mat.
  • Bake in a 350° F oven for 10-12 minutes or until they begin to brown around the edges.
