Begin by melting the butter on the stove or in the microwave. Add the sugar, honey, and milk. Mix until dissolved.
Whisk together the flour and baking soda and add it and the sour dough starter to the butter mixture.
Begin mixing with a spoon, then when the dough gets too thick switch to kneading with your hands.
Once the dough is fully mixed, shape it into a ball and cover it to let the dough rest.
Let the dough sit covered on the counter for at least 2 hours but up to 8. Then let it chill in the refrigerator for an additional 2 hours or up to 3 days.
When you are ready to cut the dough, split the ball in 2 and roll out half at a time into a 1/8 in. thin square.
Use a pizza or cracker cutter to cut the dough in your desired shapes.
Use a spatula to scoop and move the crackers to a baking sheet lined with parchment paper or a silicone baking mat.
Bake in a 350° F oven for 10-12 minutes or until they begin to brown around the edges.
