Begin by preparing your pie crust. I like to use a blind baked all butter pie crust recipe. The flaky savory crust pairs with the rich creamy pie, but a graham cracker crust would pair well too.
Once the crust is prepared and cooled completely your are ready to make the filling. First whip the cream with a hand mixer until peaks form. They do not need to be stiff.
In a separate bowl whip the cream cheese, then add the vanilla, and the sugar 1/2 cup at a time until the desired sweetness is obtained.
Once the cream cheese mixture is fully mixed, it should be the consistency of frosting. Then add the whipped cream and mix until combined.
To assemble your pie, start by layering bananas onto the bottom of your pie crust, then topping with the whipped cream cheese mixture.
Top with additional fruits and keep it in the refrigerator until ready to serve.
