Cream Cheese Fruit Pie

Ingredients
  

  • 1 pie crust either blind baked or graham cracker
  • 1 cup whipping cream
  • 8 oz cream cheese
  • 1 1/2-2 cups powdered sugar
  • 1 tsp vanilla
  • 2 small bananas

fruit toppings of your choice

  • berries
  • peaches
  • mango
  • kiwi
  • etc.

Instructions
 

  • Begin by preparing your pie crust. I like to use a blind baked all butter pie crust recipe. The flaky savory crust pairs with the rich creamy pie, but a graham cracker crust would pair well too.
  • Once the crust is prepared and cooled completely your are ready to make the filling. First whip the cream with a hand mixer until peaks form. They do not need to be stiff.
  • In a separate bowl whip the cream cheese, then add the vanilla, and the sugar 1/2 cup at a time until the desired sweetness is obtained.
  • Once the cream cheese mixture is fully mixed, it should be the consistency of frosting. Then add the whipped cream and mix until combined.
  • To assemble your pie, start by layering bananas onto the bottom of your pie crust, then topping with the whipped cream cheese mixture.
  • Top with additional fruits and keep it in the refrigerator until ready to serve.
