Grapefruit and Greens Salad with Lemon Yogurt Dressing

Ingredients
  

For the Salad

  • 1 cup quinoa
  • 10 oz. spring mix
  • 2 grapefruits with the peels and skins removed
  • 16 oz. cottage cheese
  • 2 cups cooked chicken
  • 2 avocados
  • 1 cup slivered roasted almonds

For the Dressing

  • 1/4 cup plain yogurt
  • 1 tbsp honey
  • 2 tbsp lemon juice fresh squeezed

Instructions
 

  • Start by cooking your quinoa. Add the quinoa to a pan with 2 cups water and simmer over medium low heat until the quinoa is cooked through, then set aside or in the fridge to cool.

To assemble the salad

  • Chop the avocado and chicken into bite sized pieces.
  • Place the spring mix into the bottom of 4 large bowls.
  • Top each salad with 1/4 of the cooled quinoa, 1/2 cup cottage cheese, half a grapefruit, and half an avocado.

How to Make Lemon Yogurt Dressing

  • Start by mixing the lemon juice and honey into a bowl, whisking until combined.
  • Add the yogurt and continue whisking until the dressing becomes smooth.
  • To complete the salad, sprinkle with almonds and top with lemon yogurt dressing.
