- Start by cooking your quinoa. Add the quinoa to a pan with 2 cups water and simmer over medium low heat until the quinoa is cooked through, then set aside or in the fridge to cool.
To assemble the salad
- Chop the avocado and chicken into bite sized pieces.
- Place the spring mix into the bottom of 4 large bowls.
- Top each salad with 1/4 of the cooled quinoa, 1/2 cup cottage cheese, half a grapefruit, and half an avocado.
How to Make Lemon Yogurt Dressing
- Start by mixing the lemon juice and honey into a bowl, whisking until combined.
- Add the yogurt and continue whisking until the dressing becomes smooth.
- To complete the salad, sprinkle with almonds and top with lemon yogurt dressing.
