Veggie Topped Breakfast Sandwich

Ingredients
  

  • Sourdough bread my honey oat sourdough works very well!
  • Butter mayo, or bacon grease
  • Cheddar cheese
  • Tomatoes
  • Avocado
  • Greens lettuce, spinach, and arugula all work well.
  • Bacon
  • Eggs
  • Honey Mustard Vinaigrette see recipe linked above

Instructions
 

  • Start by cooking bacon until crispy.
  • Place buttered bread onto a pan or griddle to toast.
  • fry 2 eggs per sandwich. After flipping the eggs add the cheese on the top to melt.
  • slice the tomatoes and avocado, and prepare the greens for the sandwich.
  • Add the eggs to the toasting bread along with the other topping ingredients.
  • Remove the bread from the pan and drizzle the sandwich with plenty of honey mustard.
  • Cut the sandwich in half for easy eating.
