Veggie Topped Breakfast Sandwich

Ingredients
  

  • Sourdough bread my honey oat sourdough works very well!
  • Butter mayo, or bacon grease
  • Cheddar cheese
  • Tomatoes
  • Avocado
  • Greens lettuce, spinach, and arugula all work well.
  • Bacon
  • Eggs
  • Honey Mustard Vinaigrette see recipe linked above

Method
 

  1. Start by cooking bacon until crispy.
  2. Place buttered bread onto a pan or griddle to toast.
  3. fry 2 eggs per sandwich. After flipping the eggs add the cheese on the top to melt.
  4. slice the tomatoes and avocado, and prepare the greens for the sandwich.
  5. Add the eggs to the toasting bread along with the other topping ingredients.
  6. Remove the bread from the pan and drizzle the sandwich with plenty of honey mustard.
  7. Cut the sandwich in half for easy eating.
