Creamy Homemade Dried Tomato Pasta

This creamy dried tomato pasta is made with homemade dried tomatoes, and Greek yogurt or sour cream to make a creamy and delicious dinner.

There are many variations of this type of pasta using store bought sun dried tomatoes, but this recipe will teach you how to make it all from home.

This is a great way to use up extra tomatoes in a unique and delicious way. Whether you have lots of tomatoes in your garden, or if you just have extras in your fridge that are going to go bad, try this recipe! The tomatoes can also be dried ahead of time and stored in the fridge for about a week, or the freezer for 6 months.

I have learned that when I am making things from scratch the steps are not often complicated, but there is usually a bit of waiting in-between steps. It is the same with this recipe. Although it takes time to dry your own tomatoes the steps are simple and few. The rewards for your labor are worth every step!

There are a variety of ingredients you can use to make a creamy sauce for pasta. For this recipe I recommend using Greek yogurt or sour cream. In addition to the creaminess, they help to add a delicious tang to the sauce that pairs amazingly with the dried tomato. There is a flavor difference between the yogurt and sour cream, so choose whichever flavor you prefer or have on hand; both taste great. Other ingredients you could substitute in a pinch are cream or cream cheese (thinned out with more pasta water).

Ingredients for Creamy Homemade Dried Tomato Pasta

  • 4-6 tomatoes
  • 1 small onion
  • 2 tablespoons olive oil
  • 2 tsp Italian seasoning
  • 1/2 tsp garlic powder or 2-3 cloves
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt (split)
  • 1 lb. pasta of choice
  • 1-2 cups Greek yogurt or sour cream
  • 1-2 cups reserved pasta water

How to Make HomeMade Dried Tomatoes.

Cut the tomatoes into thin slices. Spread them evenly over a cookie sheet covered by a silicone mat or parchment paper.

Bake in a 185 oven for 6-8 hours or until the tomatoes a are rubbery and no longer squishy.

I usually do this step in the morning if I am planning to have the dried tomato pasta for dinner. The dried tomatoes can also be made up to a week in advance and stored in an airtight container in the fridge. This is a good option if you have tomatoes that are going bad and won’t be able to use them until later.

How to make Homemade Dried Tomato Pasta.

Start by heating the oil in a pan over medium low heat. Thinly slice an onion, and saute the onion in the oil with the Italian seasoning over low heat.

Bring a pot of water with one tsp of salt to a boil, and pasta and stir occasionally so that the pasta stick together.

Once the onions are cooked through, add the dried tomatoes, remaining salt, pepper, and garlic. Stir to evenly coat the vegetables in the seasonings, and warm through.

When the pasta is cooked, drain it remembering to reserve 2 cups of pasta water.

Add the yogurt or sour cream and the pasta water. The amount of sour cream or yogurt you add will determine how creamy your sauce will be. 1 cup for a milder less creamy pasta and a 2cups for a richer more saucy pasta. when adding pasta water I start with 1 cup then add more after I mix in the pasta if it needs.

Add the pasta and stir, adding any additional pasta water if desired.
