Veggie Topped Breakfast Sandwich
Often breakfast sandwiches are stacked with meat and cheese but lack any colorful or nutritious vegetables. This veggie topped breakfast sandwich is layered with a variety of vegetables to enhance the nutrition and flavor of your next breakfast.
Jump to RecipeI do not often go out to a restaurant for breakfast, but I remember one specific occasion that I went to a breakfast-specific restaurant. I was disappointed to find that almost every sandwich option was void of any vegetables.
When I worked at a restaurant several years ago they had several breakfast options with a variety of vegetables included in them. One of their sandwich options was the inspiration for this recipe.
I love the flavor combination of the creamy avocado, crunchy salty bacon and crisp tomatoes. It is topped with the most delicious Honey Mustard Vinaigrette to make what I would say is the most delicious breakfast sandwich I’ve ever had.
Ingredients
- Sourdough bread (my honey oat sourdough works very well!)
- Butter, mayo, or bacon grease
- Cheddar cheese
- Tomatoes
- Avocado
- Greens (lettuce, spinach, and arugula all work well)
- Bacon
- Eggs
- Honey Mustard Vinaigrette
How to Assemble a Veggie Topped Breakfast Sandwich
Start by cooking bacon until crispy.
Place buttered bread onto a pan or griddle to toast.
While the bread toasts fry 2 eggs per sandwich. After flipping the eggs add the cheese on the top to melt.
Slice the tomatoes and avocado, and prepare the greens for the sandwich.
Add the eggs to the toasting bread along with the other topping ingredients.
Remove the bread from the pan and drizzle the sandwich with plenty of honey mustard.
Cut the sandwich in half for easy eating. I recommend making sure you have a napkin near by as the sandwich tends to be a little messy, but it is definitely worth it!
