Jump to RecipeI enjoy cheese cake, but the steps for making it are long and can be easy to mess up. This rich creamy pie is an alternative to cheese cake that whips together in just a few quick steps. It is easy to top with all your favorite fresh fruit. Bring it to your next summer potluck and everyone will enjoy.
Ingredients
- 1 pie crust (either blind baked or graham cracker)
- 1 cup whipping cream
- 8 oz cream cheese
- 1 1/2-2 cups powdered sugar
- 1 tsp vanilla
- 2 small bananas
- fruit toppings of your choice
- berries
- peaches
- mango
- kiwi
- etc.
How to make cream cheese fruit pie.
Begin by preparing your pie crust. I like to use a blind baked all butter pie crust recipe. The flaky savory crust pairs with the rich creamy pie, but a graham cracker crust would pair well too.
Once the crust is prepared and cooled completely your are ready to make the filling. First whip the cream with a hand mixer until peaks form. They do not need to be stiff.
In a separate bowl whip the cream cheese, then add the vanilla, and the sugar 1/2 cup at a time until the desired sweetness is obtained.
Once the cream cheese mixture is fully mixed, it should be the consistency of frosting. Then add the whipped cream and mix until combined.
To assemble your pie, start by layering bananas onto the bottom of your pie crust, then topping with the whipped cream cheese mixture. Top with additional fruits and keep it in the refrigerator until ready to serve.
