If you like banana bread and peanut butter you should really give this recipe a try. It has become a favorite and a go to in our family for over a year. I’ve made it for the last two birthdays that we’ve had and it has been enjoyed to the last bite.

I first made this recipe when I had several extra ripe bananas. I wanted to make something different than my usual banana bread or banana apple muffins. This recipe uses 3-4 ripe bananas to add to the sweetness and moisture of the cake. It is a great way to use up any extra ripe bananas you may have.

Because of the whole grains used to make this cake it is more nutrient dense and filling than your usual cake. But thanks to the bananas and soaked oats it is very moist and delicious in addition to nutritious.

Making deserts from scratch has become a passion of mine and this banana oat cake with natural peanut butter frosting is no exception. I love using whole ingredients for the cake and home made natural peanut butter for the frosting.

Ingredients for Banana Oat Cake

Cake

  • 1 1/2 cups water
  • 1 cup quick oats
  • 3-4 bananas
  • 2 eggs
  • 1/3 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter melted
  • 2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Frosting

  • 4 tbsp butter
  • 2 oz cream cheese
  • 2 tbsp milk
  • 2 cups powdered sugar
  • 1/4 cup natural peanut butter

How to Make Banana Oat Cake with Peanut Butter Frosting

Begin by preheating the oven to 350° F and pulling out the frosting ingredients from fridge to allow them to come to room temperature.

For the Banana Oat Cake

Boil the water in a pan on the stove, or in the microwave. Once it is boiling add the oats and let them soak until you are ready to add them to the batter.

Smash bananas with a fork or potato masher, then add the melted butter and eggs and mix well.

Add the dry ingredients on top of the wet ones and mix then together.

Once the dry ingredients are mixed add the oats and mix them until everything is incorporated.

Pour the batter into 2 9-inch round cake pans that have been buttered and floured.

Bake at 350° F for 30-40 min until a toothpick comes out clean.

How to Make Natural Peanut Butter Frosting

Begin by mixing room temperature butter, cream cheese, and peanut butter together with a hand mixer.

Add the powdered sugar 1/2 cup at a time while you continue mixing.

Once the ingredients begin to thicken, add the vanilla and enough milk to soften the frosting and make it a spreadable consistency.

When the cake has completely cooled, frost it, beginning with a layer between the two rounds.

If desired, top the cake with banana slices.
