I have made a couple kinds of home made crackers before, but one thing that stopped me from making them consistently was the amount of time it took. A lot of recipes need to be mixed, chilled, cut, and poked before they make it into the oven and I really wanted a way to make simple delicious crackers without all the steps.

Once day I decided to experiment making crackers with some sourdough discard that I had. I was able to put together some quick and simple crackers in just a few steps. I have made these crackers countless times since and have perfected the recipe to share with you.

How to Season Your Sourdough Crackers

The possibilities are endless when it comes to seasoning theses crackers. My favorite seasonings are rosemary and Italian seasonings. I have also kept them simple with just a sprinkling of salt. The flavors in these seasonings pair well with the olive oil making a delicious cracker. I have even experimented with sweet crackers by mixing in cinnamon and sprinkling with sugar, which wasn’t a complete success, but were happily eaten none the less.

Ingredients for Crackers

  • 1/8 cup (2 tbsp) olive oil
  • 2 cups sourdough discard
  • seasonings of choice
    • 1 tbsp dried herbs or seeds examples:
      • dried rosemary
      • Italian seasoning
      • sesame seeds
      • poppy seeds
      • Everything seasoning
    • 1 tsp salt

How to make Sourdough Discard Crackers

Begin by pouring 1/8 cup oil on a 13″ x 18″ cookie sheet and preheating it in an oven set to 350° F.

While the cookie sheet preheats in the oven, mix together the sourdough discard and seasonings (excluding the salt).

Once the cookie sheet is preheated, pour the discard onto the pan over the oil.

Use a spatula to spread the discard into as thin and even a layer as possible, reaching all the corners of the cookie sheet.

Sprinkle the top of the crackers with salt.

Bake in the 350° F oven for 25 minutes, or until you can see the edges just start to golden. Then turn off the oven. Leave the crackers in the oven to continue cooking as they cool to room temperature.

Once the sheet has completely cooled, remove from the oven and break the crackers into bite sized pieces.
