This summer I experimented with making popsicles a lot. I wanted to find a way to make homemade popsicles with whole food ingredients that were perfectly creamy. I tried several different ingredients to add creaminess including coconut milk, yogurt, and even avocado.

Of all the things I tried these were the only popsicles that have been so good we’ve remade them multiple times. They are super easy to make, coming together in just a few minutes, and the results are not at all icy.

Because I make my peanut butter at home in my food processor I love to make these popsicles with the leftover peanut butter. You need about 1 large banana per 1/2 cup of peanut butter. Of course the riper the banana, the sweeter your popsicles will be, so this is a perfect way to use up ripe bananas.
