Pumpkin Spice Oat Cookies Made With Whole Grains

Ingredients for Pumpkin Spice Oat Cookies
- 1/2 cup room temperature butter
- 1/3 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 tsp molasses
- 1 tsp vanilla
- 1 cup flour (all purpose or whole wheat)
- 1/2 tsp baking soda
- 1 1/2 cup oats
- 1 tbsp pumpkin pie spice
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp nutmeg
- 1/4 tsp clove
- 1/4 tsp allspice
How to Make Pumpkin Spice Oat Cookies
Preheat the oven to 350°F.
Begin the dough by beating the butter together with the sugars.

Once the butter and sugar are creamed, add the molasses and egg and beat until smooth.
Mix the flour and baking soda together on top of the butter mixture, then mix to combine.

Next, add the oats and the pumpkin pie spices and stir until combined.

Scoop the dough by rounded tablespoon onto a cookie sheet and bake in a 350°F oven for 10-12 minutes or until the edges of the cookies just start to darken.
