Ingredients For Healthy Pumpkin Applesauce Muffins
For the batter
- 1/3 cup butter (melted)
- 3/4 cup apple sauce
- 1 cup pumpkin puree
- 3/4 cup brown sugar
- 2 eggs
- 1/2 cup plain Greek yogurt (can substitute milk and/or sour cream)
- 1 tsp vanilla
- 2 cups flour (all purpose or whole wheat)
- 2 teaspoons baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice (1 tsp cinnamon; 1/4 tsp each nutmeg, ginger, clove, and allspice)

For the streusel
- 1 tbsp butter
- 1/4 cup flour
- 2 tbsp brown sugar
- 1 tsp pumpkin pie spice or cinnamon
How to Make Healthy Pumpkin Applesauce Muffins
Preheat oven to 375° F.
In a large bowl mix melted butter, applesauce, pumpkin, sugar, and eggs. Mix until combined.

On top of the wet ingredients add flour, baking soda, baking powder, and spices. Combine dry ingredients on top before incorporating into the wet ones.

Scoop batter evenly into 18 greased muffin tins (I like to use a large ice cream scoop).
For the streusel topping combine room temperature butter with flour, sugar, and spices by rubbing between fingers until it becomes crumby.

Add crumbled streusel topping to the muffins.

Bake the muffins at 375° F for 15-18 minutes.
Enjoy your healthy pumpkin applesauce muffins right out of the oven, topped with butter or cream cheese.
