Veggie Balsamic Sloppy Joes

These are not your average sloppy joes, they are full of veggies and balsamic flavor, using from scratch pantry staple ingredients to make a delicious healthy filling for your favorite bun!

Maybe it was because my childhood nick name was “Joe”, but sloppy joes have always been one of my favorite meals. Even though it is one of my favorites, I haven’t made it for dinner very often until recently. When looking for recipes I couldn’t find any that had ingredients that I had on hand. Instead of going out to buy the ingredients I decided to make my own kind of sloppy joes with pantry staples I already had.

Most classic sloppy joe recipes use ketchup and mustard to make the sauce. In order to cut out the ketchup which includes processed ingredients, I use tomato sauce instead and then add balsamic vinegar to add the tang, a little bit of sweetness, and lots of flavor.

This recipe has since become a favorite of my husband and me, and is a great way to use up peppers and have a simple veggie packed dinner.

Ingredients

  • 1 lb ground beef
  • 1 onion
  • 2-3 bell peppers
  • 1 tbsp garlic powder
  • 1/2 tbsp Italian seasoning
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1 15 oz can tomato sauce
  • 1 tbsp mustard
  • 3-4 tbsp balsamic vinegar
  • 8 hamburger buns

How to Make Veggie Balsamic Sloppy Joes

Begin by chopping the onion and adding it to a pan with the ground beef.

Chop the bell peppers and add them to the pan once the beef begins to brown. Add the salt, pepper, and seasoning to the ground beef and pepper mixture.

Once the beef is completely browned add the tomato sauce, mustard, and balsamic vinegar. Let simmer until the sauce completely thickens.

Serve the veggie balsamic sloppy joes topped with cheese on your favorite bun. I like to use this recipe to make mine homemade.

  • Let simmer until the sauce completely thickens.
  • Serve topped with cheese on your favorite bun.
