Grapefruit and Greens Salad with Lemon Yogurt Dressing

Freshen up your winter meal plan with this grapefruit and greens salad with lemon yogurt dressing. Grapefruit paired with avocado, chicken, and cottage cheese with a sweet tangy dressing makes this salad hard to pass up.

In the winter, citrus fruit is in season and can add a bright flavor and twist to the usual cozy winter dinner ideas. I made this salad the first time when trying to use up a big 5 lb bag of grape fruits. Growing up I’d never eaten grapefruit in any way other than plain on the side of my breakfast. I’ve experimented with a few different ways to use it in dinners but this has probably been my favorite.

Cutting Grapefruit for Salad

Start by cutting the top and bottom off the grapefruit, then remove the peel around the sides of the grapefruit by removing a small slice at a time and rotating as you cut.

Once all the peel is removed, insert the knife against the skin that is between each grapefruit wedge. Separate the fruit from the skin on one side, then continue to peal the fruit away from the skin, until it is removed. Repeat with each wedge of grapefruit.

Ingredients for Grapefruit and Greens Salad with Lemon Yogurt Dressing

For the Salad

  • 1 cup quinoa
  • 10 oz. spring mix
  • 2 grapefruits with the peels and skins removed
  • 16 oz. cottage cheese
  • 2 cups cooked chicken
  • 2 avocados
  • 1 cup slivered roasted almonds

For the Dressing

  • 1/4 cup plain yogurt
  • 1 tbsp honey
  • 2 tbsp lemon juice (fresh squeezed)

How to Make Grapefruit and Greens Salad with Lemon Yogurt Dressing

Start by cooking your quinoa. Add the quinoa to a pan with 2 cups water and simmer over medium low heat until the quinoa is cooked through, then set aside or in the fridge to cool.

Chop the avocado and chicken into bite sized pieces. Place the spring mix into the bottom of 4 large bowls and top each with 1/4 of the cooled quinoa, 1/2 cup cottage cheese, half a grapefruit, and half an avocado.

How to Make Lemon Yogurt Dressing

Start by mixing the lemon juice and honey into a bowl, whisking until combined.
