Greek Yogurt Lime Slaw

Greek yogurt lime slaw is made with yogurt instead of the classic mayo to make a healthier, tangy variety of slaw that pairs perfectly with my slow-cooker citrus pork.

I like a fresh coleslaw to top my street tacos, but I prefer a coleslaw with a lighter sauce than classic recipes made with mayo. While experimenting with slaw recipes I found that Greek yogurt makes a great substitute. I like that yogurt makes a creamy slaw with added protein and a fresh tang. The lime juice adds a delicious tartness, and the orange juice contributes a natural sweetness and lovely citrus flavor.

Fresh squeezed lime juice is probably the best way to top any street taco, so the lime juice in this slaw makes it a perfect pair for street tacos as well. Try it on my citrus sweet pork tacos, or with your favorite street taco recipe.

Ingredients

  • 3-4 cups shredded cabbage
  • 1-2 carrots shredded
  • 1-2 jalapenos (seeds removed) thinly sliced
  • 1 cup Greek yogurt
  • juice and zest of one orange
  • juice and zest of one lime
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

How to make Greek yogurt lime slaw

Finely chop the cabbage, shred the carrot, and thinly slice the seeded jalapeno.

Add all the vegetables to a bowl and top with lime and orange juices, and salt. If desired, massage the juices into the cabbage to help soften the leaves.

Add the garlic powder, onion powder, and yogurt, then mix together until completely combined.

Chill in the refrigerator for 1-2 hours or until ready to serve.
